WHere is a home-style take on a beverage featured on the seasonal cocktail list. It's a large-volume pre-mixed that is bursting with the tastes of the holiday season, which makes it excellent for a festive gathering. Any leftover citrus syrup to use in breakfast cocktails, sweets, or for another batch of the drink.

The Bikini Cocktail

Serves 10 people

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Cocktail (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Put the listed ingredients into a pan, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the heat allowing it to cool fully. Transfer into a sealable bottle, cap it and refrigerate it in the refrigerator, it will last for around one month.

For the Premix: Mix every spirits and syrup into a sizeable container, let it rest for one hour, then filter it best through cheesecloth, making it completely strained.

When ready to serve: Measure 85ml of your premix into your stirring glass filled with ice, and stir lightly for one minute to cool it down. Filter to a cold coupe glass or equivalent, top with some cranberries and finish using a quick spritz with the mandarin essence over the top.
